Cypriot sheftalia
Sheftalia - Greek Cypriot crapinette, a sausage without skin, using caul fat, or omentum, the membrane that surrounds the stomach, to wrap the ingredients rather than sausage casing. Caul fat is transparent, fragile, and naturally fatty, so you will not need to baste when grilling.
